The Advanced Chef Diploma is an exciting two-year programme designed for aspiring chefs who want to develop the skills, knowledge and confidence needed to succeed in the hospitality and catering industry. Combining practical kitchen training with industry-relevant theory, the course provides a strong foundation in professional cookery and prepares learners for work in restaurants, hotels, pubs, contract catering and other commercial food production environments.
In the first year, learners focus on mastering the essential skills required in every professional kitchen. This includes food safety and hygiene, health and safety, kitchen organisation, knife skills, ingredient preparation, cookery methods, stocks, soups and sauces, nutrition, menu planning and food costing. Through practical sessions in professional-standard training kitchens and the View Restaurant, learners gradually build their confidence, accuracy, speed and consistency while developing the professional standards expected by employers.
During the second year, learners expand their culinary expertise through specialist commodity-based units. They learn how to prepare, cook and present a wide range of dishes using meat, poultry, fish and shellfish, rice, pasta, grains, eggs, desserts and fermented dough products. As their skills develop, learners are encouraged to work with greater independence, organisation and creativity, producing dishes to industry standards under realistic working conditions. The programme culminates in a synoptic practical assessment where learners demonstrate their ability to plan, prepare, cook and present multiple dishes while working to professional briefs and time constraints.
Throughout the course, learners develop valuable employability skills including teamwork, communication, time management, problem-solving and working effectively under pressure. Successful completion can lead directly to employment opportunities such as Commis Chef, Production Chef or Catering Team Member, while also providing a progression route to higher-level culinary qualifications and apprenticeships.
